JERUSALEM ARTICHOKES, Fuseau to plant or eat £3.75/Kg Similar to Potatoes they are a carbohydrate but lower GI (good for Diabetics and dieters) - This versatile tuber can be Boiled, Baked, Steamed and Roasted for soups, sauces or as a side veg. Try them grated with egg and seasoned flour to make fritters. Fantastically easy to grow and delicious to eat but beware they have a darker side … their nickname is Fartichokes – you have been warned. Jerusalem Artichoke Fritters Basic Ingredients 350g Jerusalem Artichokes - Grated 60g Plain flour 3 Eggs Optional extras 1 red onion - finely sliced 2 tbsp Oats 30g Parmesan - Grated 30g Smoked Chedder - Grated ½ tsp Salt Pepper - sprinkle Paprika - sprinkle 30g Parsley 2 tbsp Light olive oil, for frying Mix all together, spoon dollups into frying pan with hot oil and fry both sides till golden brown. Serve with Sweet Chile Sauce, chutney or alone
