Braising steak is cut from a variety of muscles which needs slow, long moist cooking to keep it melt in your mouth tender. Use it to make comforting stews, delicious pies or get all fancy and try a beef bourguigon (which I am still to entirely sure if I can make - various efforts have always turned out different from expected - lovely but different! And please don't check my spelling!)
